Apple & Carrot Muffins: Gluten Free, Casein Free, Soya Free, Naturally Sweetened
A tasty healthy treat without any added refined sugar!

Ingredients:

Almond Flour 240g

GF Wholegrain Oats 140g

2 tsp Ground Cinnamon (optional)

1 tsp Baking Soda
-
1/2 tsp Fine Sea Salt
-
Chopped Walnuts 75g
-
Pure Maple Syrup 6 tbsp

3 Eggs
-
6 tbsp Melted Coconut Oil
-
2 Grated Granny Smith Apples, with skin

2 Large Grated Carrots
Instructions:

Preheat oven to 170C (Fan)

Line a 12 cup muffin tin with paper cases

In a bowl whisk together the maple syrup, eggs and melted coconut oil

Add the grated apple and carrots and mix
-
Pour this mixture into all the dry ingredient, mixing to combine

Spoon the batter into the muffin cases

If you wish decorated the top with a few apple slices
-
Bake until the muffins are nicely brown on top and a knife inserted in the centre comes out clean

25-30 minutes, Allow muffins to cool completely before storing in and airtight container
-
Store muffins in fridge or freezer
-
Can be heated on a low power in the microwave if you prefer them warm
