Muffins with Apples

Apple & Carrot Muffins: Gluten Free, Casein Free, Soya Free, Naturally Sweetened

A tasty healthy treat without any added refined sugar!

Ingredients:
  • Almond Flour 240g

  • GF Wholegrain Oats 140g

  • 2 tsp Ground Cinnamon (optional)

  • 1 tsp Baking Soda

  • 1/2 tsp Fine Sea Salt

  • Chopped Walnuts 75g

  • Pure Maple Syrup 6 tbsp

  • 3 Eggs

  • 6 tbsp Melted Coconut Oil

  • 2 Grated Granny Smith Apples, with skin

  • 2 Large Grated Carrots

Instructions:
  1. Preheat oven to 170C (Fan)

  2. Line a 12 cup muffin tin with paper cases

  3. In a bowl whisk together the maple syrup, eggs and melted coconut oil

  4. Add the grated apple and carrots and mix

  5. Pour this mixture into all the dry ingredient, mixing to combine

  6. Spoon the batter into the muffin cases

  7. If you wish decorated the top with a few apple slices

  8. Bake until the muffins are nicely brown on top and a knife inserted in the centre comes out clean

  9. 25-30 minutes, Allow muffins to cool completely before storing in and airtight container

  10. Store muffins in fridge or freezer

  11. Can be heated on a low power in the microwave if you prefer them warm

  12. An ideal healthy option for Breakfast or a Snack
